Ingredients
- 225g Dodoni Halloumi
- 80g plain flour
- 1 tbsp oregano
- ¼ tsp salt
- ¼ tsp pepper
- frying oil
- 200g greek yoghurt
- the juice of ½ a lemon
- ½ tsp smoked paprika
- ¼ tsp salt
- 1 pinch cayenne pepper
- ½ tablespoon sun-dried tomatoes with olive oil
Process
- Cut the Dodoni Halloumi along the seam in two halves and then into 1cm-thick sticks
- Mix the flour, oregano, salt and pepper in a dish and roll the Halloumi sticks into the mixture so that they are completely covered in flour. Shake them to remove any excess flour
- Heat the oil in a hot frying pan and place in the pan as many Halloumi sticks as will fit. Leave for 2 minutes and once browned, turn them over to cook on the other side for another 2 minutes. When ready, remove them and place them on absorbent kitchen paper
- To make the yoghurt sauce, add together the yoghurt, lemon juice, smoked paprika, salt and cayenne pepper, and mix well
- Transfer the yoghurt sauce to a serving bowl, decorate with ½ tbsp sun-dried tomatoes and add a sprinkling of olive oil on top
TIP: Halloumi sticks are the perfect canape, as well as an accompanying treat to any main dish.
